Thai Jamaican Coconut Cream Soup

- β1 can coconut creamfull-fat coconut milk
- β2 tsp jamaican jerk seasoning
- β1 medium onion
- β3 cloves garlic
- β2 inches ginger
- β1 cup winey mushrooms
- β1 stalk lemongrass
- β1 tsp fish sauce
- β2 tbsp lime juice

Instructions

In a large pot, heat 2 tbsp of oil over medium heat.

Add the onion, garlic, and ginger, and cook until fragrant.

Add the mushrooms, lemongrass, and jerk seasoning, and cook for 5 minutes.

Pour in the coconut milk and fish sauce, and bring to a simmer.

Reduce heat to low and let cook for 10 minutes.

Use an immersion blender to puree the soup until smooth.
