Vegan Kenyan Stir Fry
A quick and flavorful Kenyan-inspired stir fry made with wilted vegetables, perfect for a weeknight dinner.
Ingredients
- β1 bunch Wilted vegetables (such as spinach, kale, and collard greens)any combination of wilted greens
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 large Sweet potatopeeled and diced
- β2 medium Carrotspeeled and grated
- β2 medium Bell peppersany color, sliced
- β2 tablespoons Avocado oilfor cooking
- β2 tablespoons Lime juicefreshly squeezed
- βto taste Saltoptional
- βto taste Black pepperoptional
Instructions

Heat the avocado oil in a large skillet over medium-high heat.

Add the onion and garlic and cook until the onion is translucent, about 3-4 minutes.

Add the sweet potato and carrots and cook for an additional 5 minutes, stirring occasionally.

Add the bell peppers and cook for an additional 3-4 minutes, stirring occasionally.

Add the wilted vegetables and cook until they are heated through, about 2-3 minutes.

Season with salt and black pepper to taste.

Squeeze the lime juice over the top and stir to combine.
