Kenyan Greens and Pilaf
A flavorful and nutritious dish inspired by Kenyan cuisine, featuring sautéed greens and steamed pilaf.
Ingredients
- ●2 cups, chopped greens (kale, spinach, collard greens)
- ●1 cup brown rice
- ●2 cups chicken broth
- ●as needed steam (for cooking rice)
- ●2 tablespoons wholesome oil (coconut or olive)
- ●1 medium, chopped onion
- ●2 cloves, minced garlic
- ●to taste salt
- ●to taste black pepper
- ●to taste optional: other spices (cumin, paprika, turmeric)
Instructions

Heat wholesome oil in a large skillet over medium heat.

Add chopped onion and sauté until softened, about 3-4 minutes.

Add minced garlic and sauté for another minute.

Add chopped greens and sauté until wilted, about 3-4 minutes.

While the greens are cooking, prepare the pilaf.

Rinse brown rice and cook according to package instructions using chicken broth.

Steam the cooked rice until tender, about 10-15 minutes.

Fluff the cooked pilaf with a fork.
