Tunisian Chickpea Tagine
A flavorful and aromatic stew originating from Tunisia, made with chickpeas, warmly spiced, and featuring a rich and slightly sweet tagine sauce.
Ingredients

- β1 medium Onion
- β3 cloves Garlic
- β2 tablespoons Warmly Spiced Tunisian Olive Oil
- β1 teaspoon Cumin
- β1 teaspoon Cinnamon
- β1/2 teaspoon Ginger
- β1/2 teaspoon Salt
- β1/4 teaspoon Black Pepper
- β1 cup Tagine

Heat the warmly spiced Tunisian olive oil in a large clay or ceramic pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the cumin, cinnamon, ginger, salt, and black pepper. Cook for 1-2 minutes.

Add the chickpeas and tagine. Stir to combine.

Bring the mixture to a simmer.

Reduce the heat to low and cook, covered, for 20-25 minutes or until the flavors have melded together and the chickpeas are tender.
