Cheesy Warming Pasta Bake
A comforting and satisfying vegan pasta dish, perfect for a chilly evening. The rigatoni is baked with a creamy and tangy cheesy sauce.
Ingredients
- β250g Rigatoni pasta
- β100g Plant-based cheese shredssuch as Daiya or Follow Your Heart
- β20g Vegan butter or margarinesuch as Earth Balance
- β1 tsp Warming spice mixsuch as cumin, paprika, and turmeric
- β15g Chopped fresh parsley
- βto taste Salt and pepper
- β1 tsp Nutritional yeastoptional, for cheesy flavor

Preheat the oven to 180Β°C (350Β°F).

Cook the rigatoni pasta according to the package instructions until al dente. Drain and set aside.

In a large saucepan, melt the vegan butter or margarine over medium heat.

Add the warming spice mix and cook for 1-2 minutes, stirring constantly.

Add the plant-based cheese shreds and stir until melted and smooth.

Add the cooked rigatoni pasta to the saucepan and toss to coat with the cheesy sauce.

Transfer the pasta mixture to a baking dish and top with chopped fresh parsley.

Bake in the preheated oven for 15-20 minutes, or until the top is golden brown and the sauce is bubbly.
