Apricot Chicken Stew

- β1 lb Boneless, skinless chicken breasts
- β1 cup, diced ApricotsCanned or fresh
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β2 medium, peeled and cubed Sweet potatoes
- β2 tbsp Tomato paste
- β2 cups Chicken brothGluten-free
- β1 tsp Cumin
- β1 tsp Paprika
- β Salt and pepper

Heat oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.
