Northern Irish Shrimp and Yorkshire Pudding
A traditional Northern Irish dish featuring succulent shrimp and crispy Yorkshire pudding, perfect for a hearty dinner.
Ingredients
- β12 large Shrimppeeled and deveined
- β1 package Yorkshire pudding mixfollow package instructions
- β2 tablespoons Buttermelted
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β2 tablespoons All-purpose flourfor dusting
- β1 large Eggbeaten
- β1 cup Milkwhole milk or 2%
- βto taste Salt and pepperfreshly ground

Preheat oven to 425Β°F (220Β°C).

In a large bowl, whisk together flour, egg, and milk until smooth. The batter should still be slightly lumpy.

Add the melted butter and mix until fully incorporated.

Season with salt and pepper to taste.

Heat a 12-cup muffin tin in the oven for 5 minutes.

Carefully remove the muffin tin from the oven and add a small amount of oil to each cup.

Pour the Yorkshire pudding batter into each cup, filling about 1/2 full.

Return the muffin tin to the oven and bake for 20-25 minutes, or until puffed and golden brown.

While the Yorkshire pudding is baking, heat a large skillet over medium-high heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute, until fragrant.

Add the shrimp to the skillet and cook until pink and fully cooked, about 2-3 minutes per side.

Serve the shrimp on top of the Yorkshire pudding, spooning some of the onion and garlic mixture over the top.
