Roast Chicken with Mediterranean Twist
A classic Italian roasted chicken with a hint of Mediterranean flavors. Perfect for a family dinner.
Ingredients

- ●2 tbsp roastolive oil
- ●2 cloves garlicminced
- ●1 tbsp lemon juicefreshly squeezed
- ●1 tsp oreganodried
- ●1 tsp thymedried
- ●1 tsp saltto taste
- ●1/2 tsp pepperto taste
- ●2 spring onionschopped (optional)

Preheat oven to 425°F (220°C).

Rinse and pat dry the chicken.

Season the chicken with salt, pepper, and oregano.

Heat the olive oil in a large skillet over medium-high heat.

Sear the chicken on all sides until browned, about 5 minutes.

Transfer the chicken to a roasting pan and roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

While the chicken is roasting, mix the minced garlic and lemon juice in a small bowl.

Brush the garlic-lemon mixture over the chicken during the last 15 minutes of roasting.
