Mediterranean Roast Chicken

Ingredients
- β1 whole chicken chickenapproximately 4 lbs
- β2 tbsp olive oilfor roasting
- β2 tbsp lemon juiceto enhance flavor
- β3 cloves garlicminced
- β1 tsp oreganodried
- β1 tsp thymedried
- βto taste saltfor seasoning
- βto taste pepperfor seasoning
- β1 cup roasted vegetablessuch as Brussels sprouts or carrots

Rinse the chicken and pat it dry with paper towels.

Season the chicken with salt, pepper, oregano, and thyme.

Heat the olive oil in a large oven-safe skillet over medium-high heat.
