Saudi Arabian Chicken Tagine with Mexican Twist

- β1 1/2 pounds Boneless, skinless chicken thighsCut into 1 1/2-inch pieces
- β2 tablespoons Tagine spice mixAvailable at Middle Eastern markets or online
- β2 Chipotle peppers in adobo sauceMinced
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1/4 cup Fresh cilantroChopped
- β2 tablespoons Lime juiceFreshly squeezed

Heat oil in the bottom of a large clay or ceramic tagine or Dutch oven over medium-high heat.

Add chicken and cook until browned on all sides, about 5-7 minutes. Remove from pot and set aside.

Reduce heat to medium and add onion and cook until softened, about 5 minutes.

Add garlic, chipotle peppers, and tagine spice mix. Cook for 1 minute, stirring constantly.

Add browned chicken back to the pot, along with lime juice and cilantro. Stir to combine.

Cover the pot and transfer to the oven. Braise for 25-30 minutes or until the chicken is cooked through.
