Peanut Butter Stew
A warm, smoky, and flavorful Thai-inspired stew made with peanut butter and Dutch stew. Serve with a side of steamed rice for a delicious meal.
Ingredients
- β1 cup Dutch Stewcut into 1-inch pieces
- β2 tablespoons Peanut Buttercreamy peanut butter
- β1 medium Oniondiced
- β2 cloves Garlicminced
- β1 medium Red Bell Pepperdiced
- β1 can (14 oz) Tomatodiced
- β1 cup Coconut Milkfull-fat coconut milk
- β1 tablespoon Fish Sauceoptional
- β1 tablespoon Honeyoptional
Instructions

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the stew, onion, and garlic and cook until the stew is browned, about 5 minutes.

Add the red bell pepper and cook for another 2 minutes.

Add the tomato, coconut milk, fish sauce, and honey (if using).

Stir in the peanut butter until smooth.

Bring the stew to a simmer and cook for 20-25 minutes.

Season with salt and pepper to taste.

Serve the stew hot, garnished with chopped peanuts or fresh cilantro (if desired).
