Moroccan Green Tagine
A hearty and flavorful stew originating from Morocco, typically made in a clay pot called a tagine.
Ingredients
- β1 cup, pitted green olives
- β2 cups, chopped fresh spinach green
- β2 tablespoons olive oil
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β1 teaspoon cumin
- β1 teaspoon coriander
- β1/2 teaspoon salt
- β1/4 teaspoon pepper
Instructions

Heat the olive oil in the bottom of a clay tagine or large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for an additional 1-2 minutes.

Add the cumin, coriander, salt, and pepper; cook for 1 minute.

Add the chopped spinach and cook until wilted.

Add the green olives and stir to combine.

Bring the mixture to a simmer and cook for 10-15 minutes, or until the flavors have melded together.

Serve hot, garnished with additional spinach if desired.
