Chinese Chickpea Stir Fry
A quick and easy Chinese-inspired dish made with chickpeas, warming spices, and a hint of Algerian flair.
Ingredients
- β1 1/2 cups chickpeasdrained and rinsed
- β2 tablespoons olive oilwarm
- β1 medium onionsliced
- β2 cloves garlicminced
- β1 tablespoon gingergrated
- β1/2 teaspoon saffronalgerian spice
- β2 tablespoons soy saucelow-sodium
- β1 tablespoon brown sugaroptional
Instructions

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Add the sliced onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and grated ginger and cook for an additional minute, stirring constantly.

Add the chickpeas, saffron, soy sauce, and brown sugar (if using) to the skillet.

Stir to combine and cook for 2-3 minutes, or until the chickpeas are coated in the sauce.
