Crispy Baingan Bharta Fritters
A Mexican twist on the Indian classic, these crispy fritters are packed with roasted eggplant and spices.
Ingredients
- β1 cup Crispy Baingan Bhartastore-bought or homemade
- β1/2 cup all-purpose flourfor coating
- β1/4 cup cornstarchfor coating
- β2 eggsbeaten
- β1 cup vegetable oilfor frying
- β1 medium onionfinely chopped
- β2 cloves garlicminced
- β1 tsp cumin powderoptional
- β1/2 tsp chili powderoptional
- βto taste salt

Heat oil in a deep frying pan over medium-high heat.

Prepare the coating mixture by combining flour and cornstarch in a shallow dish.

Dip each fritter into the beaten eggs and then coat in the flour mixture, shaking off excess.

Fry the fritters in batches until golden brown and crispy, about 3-4 minutes per side.

Drain on paper towels and serve hot with your favorite dipping sauce.

For the onion and garlic mixture, heat a tablespoon of oil in a pan over medium heat.
