Spiced Eggplant Bharta
A gluten-free Indian dish made with roasted eggplant, spices, and herbs.
Ingredients

- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1-inch piece GingerGrated
- β1 medium TomatoDiced
- β1 teaspoon Red chili powderAdjust to taste
- β1/2 teaspoon Garam masalaAdjust to taste
- β1/2 teaspoon SaltAdjust to taste
- β1/4 cup Fresh cilantroChopped

Preheat the oven to 400Β°F (200Β°C).

Cut the eggplant in half lengthwise and place on a baking sheet.

Roast the eggplant in the oven for 30-40 minutes, or until tender.

Let the eggplant cool slightly, then scoop out the flesh and chop it.

Heat oil in a pan over medium heat.

Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.

Add the diced tomato and cook for 2-3 minutes.

Add the roasted eggplant, red chili powder, garam masala, and salt. Mix well.
