Crispy Kare Kare with Fried Eggplant
A Filipino-inspired dish made with tender eggplant, crispy peanuts, and a rich peanut sauce.
Ingredients
- ●1 large eggplantpreferably purple or Japanese
- ●1/4 cup peanutsroasted and chopped
- ●2 tablespoons peanut buttercreamy
- ●2 tablespoons kare kareFilipino peanut sauce
- ●3 cloves garlicminced
- ●1 tablespoon gingergrated
- ●to taste salt
- ●for frying peanut oil
Instructions

Cut the eggplant into 1-inch cubes and set aside.

Heat 2 tablespoons of peanut oil in a pan over medium heat.

Add the minced garlic and grated ginger and sauté until fragrant.

Add the cubed eggplant and cook until tender, about 10 minutes.

In a separate pan, heat 1 tablespoon of peanut oil over medium heat.

Add the chopped peanuts and cook until crispy, about 3-4 minutes.

Add the peanut butter, kare kare, salt, and stir until combined.

Add the cooked eggplant to the sauce and stir until coated.

Serve the eggplant with crispy peanuts and a fried eggplant slice on top.
