Spicy Thai Chickpea Wrap
A fusion twist on traditional Thai cuisine with the addition of warm, creamy chickpeas and crispy falafel. Perfect for a flavorful and filling snack.
Ingredients

- β1 1/2 cups, cooked Chickpeas
- β2 tbsp Thai Red Curry Paste
- β1/2 cup Coconut Milk
- β2 tbsp Lime Juice
- β1/4 cup, chopped Cilantro
- β4-6 Warm Naan Breads

Heat 1 tablespoon of oil in a pan over medium heat.

Add the Thai Red Curry Paste and cook, stirring constantly, for 1-2 minutes.

Add the cooked chickpeas and stir to combine with the curry paste.

Stir in the coconut milk and bring the mixture to a simmer.

Reduce the heat to low and let the mixture cook for 5 minutes, stirring occasionally.

Warm the naan breads by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
