Tunisian Chicken Tagine
A flavorful and aromatic stew from Tunisia, made with chicken, peppers, and spices. Serve over couscous for a hearty meal.
Ingredients
- β1 1/2 pounds chicken thighs
- β1 large green pepperchopped
- β1 large vibrant pepperchopped
- β2 teaspoons tagine spice blend
- β2 tablespoons olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 cup couscous
- β2 cups chicken broth

Heat the olive oil in a large clay tagine or Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped peppers and cook until tender, about 5 minutes.

Add the chicken thighs and cook until browned on all sides, about 5-7 minutes.

Add the tagine spice blend, chicken broth, and bring to a boil.

Reduce heat to low and simmer, covered, until the chicken is cooked through and the sauce has thickened, about 25-30 minutes.
