Vegan Roasted Wrap
A flavorful and easy-to-make vegan wrap filled with roasted vegetables and vibrant spices.
Ingredients
- β1/4 cup Kielbasause vegan kielbasa or omit for a kielbasa-free version
- β1 Roasted Wrap
- β1 cup Roasted Vegetablessuch as bell peppers, zucchini, and onions
- β1 tsp Vibrant Spicessuch as cumin and paprika
- β2 tbsp Vegan Hummus
- β1/4 cup Fresh Cilantro
- β1 cup Lettuce
- β1 cup Tomato
- β1 tbsp Vegan Mayo
- β2 tbsp Pickled Red Onionsee notes for recipe

Preheat the oven to 400Β°F (200Β°C).

Toss the roasted vegetables with olive oil, vibrant spices, and salt. Spread on a baking sheet and roast for 20-25 minutes.

Warm the wrap in the oven for 2-3 minutes.

Spread the vegan hummus on the wrap.

Add the roasted vegetables, kielbasa, lettuce, tomato, and pickled red onion.

Drizzle with vegan mayo and garnish with fresh cilantro.

Note: For the pickled red onion, slice 1/2 cup red onion and soak in 2 tbsp vinegar for 10-15 minutes.
