Vibrant Italian Pasta Bake
A colorful pasta dish loaded with flavors of Italy, perfect for a weeknight dinner. This vibrant bake combines pasta, vegetables, and cheese for a satisfying meal.
Ingredients
- β8 oz (225g) pastapenne or fusilli work well
- β1 cup (250ml) vibrant saucestore-bought or homemade
- β8 oz (225g) baked mozzarellashredded or sliced
- β1 tsp italian seasoningdried oregano, basil, and thyme
- β2 cloves garlicminced
- β1 medium zucchinisliced
- β1 medium bell pepperssliced
- β1 medium onionchopped
- β2 tbsp olive oilfor brushing

Preheat the oven to 400Β°F (200Β°C).

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the garlic, onion, bell peppers, and zucchini. Cook until the vegetables are tender, about 5 minutes.

Stir in the vibrant sauce and cook for an additional 2 minutes.

In a large mixing bowl, combine the cooked pasta, vegetables, and sauce. Mix well to combine.

Transfer the pasta mixture to a 9x13 inch baking dish. Sprinkle the baked mozzarella on top.

Season with italian seasoning and a pinch of salt.

Cover the baking dish with aluminum foil and bake for 20 minutes.
