Roast Chuck with Roasted Vegetables
A hearty and flavorful dish featuring a slow-cooked roast chuck served with a variety of roasted vegetables.
Ingredients
- β1 (2-3 pound) piece chuck roast
- β1 pound trofie pasta
- β2 vibrant bell peppersany color
- β4 crunchy carrots
- β2 tablespoons olive oil
- βto taste salt
- βto taste black pepper
- βchopped (optional) fresh parsley
Instructions

Preheat the oven to 325Β°F (160Β°C).

Season the chuck roast with salt and black pepper.

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the chuck roast until browned on all sides, about 2-3 minutes per side.

Transfer the roast to a large baking sheet and roast in the preheated oven for 2-1/2 hours, or until tender.

Toss the bell peppers and carrots with olive oil, salt, and black pepper on a baking sheet.
