Indian-Style Roast Chuck with Trofie Pasta
A hearty and flavorful Indian-inspired dish featuring tender roast chuck and trofie pasta in a rich tomato sauce.
Ingredients
- β1.5 lbs 1.5 lbs chuck roastpreferably at room temperature
- β 2 tbsp olive oilfor cooking
- β 1 onionchopped
- β 2 cloves garlicminced
- β14.5 oz 1 can diced tomatoespreferably crushed
- β 1 cup trofie pastadried
- β 1 tsp ground cuminoptional
- β 1 tsp ground corianderoptional
- β 1 tsp garam masalaoptional
- β Salt and pepperto taste

Preheat the oven to 300Β°F (150Β°C).

Season the chuck roast with salt and pepper.

Heat the olive oil in a large Dutch oven over medium-high heat. Sear the chuck roast until browned on all sides, about 2-3 minutes per side.

Transfer the roast to the preheated oven and roast for 2-3 hours, or until tender.

While the roast is cooking, cook the trofie pasta according to package instructions.

In a large skillet, cook the chopped onion and minced garlic over medium heat until the onion is translucent.

Add the diced tomatoes, cumin, coriander, and garam masala to the skillet. Stir to combine.

Once the roast is done, remove it from the oven and let it rest for 10 minutes.

Slice the roast against the grain and add it to the skillet with the tomato sauce.

Toss the cooked trofie pasta in the skillet with the roast and sauce.
