Baked Snapper Pastitsio
A Mediterranean twist on the classic Greek pasta dish, featuring fresh snapper as the star ingredient.
Ingredients
- β2 Snapper filletFresh and sustainable
- β1 cup Vibrant tomato sauceHomemade or store-bought
- β1/4 cup Crispy panko breadcrumbsFor topping
- β8 oz Greek pasta (such as penne or rigatoni)Cooked al dente
- β2 cups Fish stockFor moisture and flavor
- β1/4 cup Parmesan cheeseGrated and sprinkled on top
- β2 tbsp Olive oilFor drizzling
- β Salt and pepperTo taste

Preheat the oven to 375Β°F (190Β°C).

Cook the Greek pasta al dente according to package instructions.

In a separate pan, heat the fish stock over medium heat.

Add the vibrant tomato sauce to the pan and stir to combine.

Season the snapper fillet with salt and pepper.

Place the snapper fillet in a baking dish and spoon the tomato sauce over the top.
