French-Style Mushroom Crepes

- β1 1/2 cups whole milk
- β2 eggs
- β1 cup mushrooms
- β2 tablespoons butter
- β1 medium onions
- β2 cloves garlic

In a large mixing bowl, whisk together the flour, eggs, and a pinch of salt.

Gradually add in the whole milk, whisking until smooth.

Heat a small non-stick pan over medium heat and add a small amount of butter.

Once the butter has melted, add in the mushrooms and cook until they release their liquid and start to brown.

Add in the onions and garlic and cook until the onions are translucent.

Add in the cooked mushroom mixture to the crepe batter and stir to combine.

Heat a large non-stick pan over medium heat and add a small amount of butter.

Once the butter has melted, add in a small amount of the crepe batter and tilt the pan to evenly coat the bottom.

Cook for 1-2 minutes, until the edges start to curl and the surface is dry.

Loosen the crepe with a spatula and flip it over.
