Thai Pepper Chow Fun
A spicy and savory stir-fry dish featuring Chinese chow fun noodles, served with a side of steamed vegetables.
Ingredients
- β1 package Fun noodlesChinese chow fun noodles
- β2 tablespoons Vegetable oilFor stir-frying
- β2 Unique eggsBeaten for the omelette
- β1 cup Sliced pepperAny color
- β1 cup Chow chowA mix of shredded cabbage and carrots
- β2 tablespoons Soy sauceFor seasoning
- β1 tablespoon Fish sauceFor umami flavor
Instructions

Cook the fun noodles according to package instructions, then set aside.

In a separate pan, heat the vegetable oil over medium-high heat.

Add the sliced pepper and stir-fry for 3-4 minutes, until tender.

Add the chow chow and stir-fry for another 2-3 minutes.

Push the vegetables to one side of the pan, and add a little more oil if needed.

Pour the beaten eggs onto the other side of the pan, and scramble them until cooked through.

Mix the eggs with the vegetables, and add the cooked fun noodles.

Season with soy sauce and fish sauce, and stir-fry for another minute.

Serve hot, garnished with chopped green onions if desired.
