Light and Easy Irish Paella
A simplified, one-pot dish that combines the flavors of Ireland with the classic Spanish paella.
Ingredients

- β2 tbsp light olive oil
- β1 lb Irish sausagesliced
- β1 cup paellauncooked, Spanish-style

Heat the light olive oil in a large skillet or paella pan over medium heat.

Add the sliced Irish sausage and cook until browned, about 5 minutes.

Add the peeled and diced potatoes to the pan and cook for an additional 5 minutes.

Add the uncooked paella to the pan and stir to combine with the sausage and potatoes.

Cook the paella for 10-12 minutes, or until the liquid has been absorbed and the rice is tender.

Season with salt and pepper to taste, and serve hot.
