German Potato and Irish Lamb Sausage Paella
A hearty German-inspired paella dish featuring Irish lamb sausage, potatoes, and a medley of vegetables.
Ingredients
- β1 pound Irish lamb sausagecasings removed
- β2 large light potatoescut into 1-inch wedges
- β1 cup uniquediced
- β1 cup paellauncooked
- β2 tablespoons olive oil
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 cups chicken broth
- β1 cup white wine
- β1 large tomatodiced
- β1/4 cup fresh parsleychopped

Heat the olive oil in a large paella pan over medium-high heat.

Add the sausage and cook until browned, about 5 minutes. Remove from pan and set aside.

Add the onion and garlic to the pan and cook until the onion is translucent, about 5 minutes.

Add the potatoes, unique, and paella to the pan and cook for 5 minutes, stirring frequently.

Add the chicken broth, white wine, and tomato to the pan. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.

Add the cooked sausage back to the pan and stir to combine.

Cook for an additional 5 minutes, until the liquid has been absorbed and the paella is cooked through.
