Norwegian Fish Stew
A hearty and flavorful stew originating from Norway, made with fresh fish and a variety of vegetables.
Ingredients
- β4 Cod filletsFresh or frozen, 6 oz each
- β1 OnionMedium-sized, chopped
- β3 cloves GarlicMinced
- β1 tsp Dried thymeFresh or dried
- β SaltTo taste
- β Black pepperTo taste
- β2 PotatoesMedium-sized, peeled and chopped
- β2 CarrotsMedium-sized, peeled and chopped
- β2 cups Fish stockHomemade or store-bought
- β1 cup White wineOptional

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for another minute, until fragrant.

Add the cod fillets and cook for 2-3 minutes on each side, until browned.

Add the potatoes, carrots, thyme, salt, and pepper. Stir to combine.

Pour in the fish stock and white wine (if using). Bring to a boil, then reduce the heat to low and simmer for 10-12 minutes, until the fish is cooked through and the vegetables are tender.

Serve hot, garnished with chopped fresh herbs if desired.
