Garlicky Fish Stew
A Chinese-inspired stew featuring garlicky flavors and Norwegian fish.
Ingredients
- β4 fish fillets (Norwegian salmon)Skin removed, cut into bite-sized pieces
- β3 cloves garlicMinced
- β1 cup understated mushroomsSliced
- β1 can stew tomatoesDiced
- β2 tablespoons soy sauceLow-sodium
- β1 tablespoon oyster sauceOptional
- β1 tablespoon rice vinegarFor serving
- β2 tablespoons vegetable oilFor cooking

Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.

Add the fish pieces and cook until golden brown, about 3-4 minutes. Remove from pan and set aside.

In the same pan, add the remaining 1 tablespoon of vegetable oil.

Add the minced garlic and cook until fragrant, about 1 minute.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 3-4 minutes.

Add the diced stew tomatoes, soy sauce, and oyster sauce (if using). Stir to combine.

Return the cooked fish to the pan and stir to coat with the sauce.

Reduce heat to medium-low and simmer, uncovered, for 5-7 minutes or until the fish is cooked through.

Serve hot with a drizzle of rice vinegar, garnished with sliced green onions (optional).
