Basque-Style Cheesy Galette
A savory, French-Basque inspired dish featuring a dense, flaky crust topped with a blend of cheeses.

Roll out the ultra-dense pastry dough to a thickness of about 1/8 inch (3 mm).

Transfer the dough to a 9-inch (23 cm) tart pan with a removable bottom.

In a bowl, mix together the cheddar, French cheddar, and Basque cheese.

Spread the cheese mixture evenly over the center of the dough, leaving a 1-inch (2.5 cm) border around the edges.
