French Gazpacho with Tofu
A French-inspired twist on the classic Spanish gazpacho soup, featuring tofu as a protein source. This refreshing summer soup is perfect for hot days.
Ingredients
- β1 block (12 oz) TofuExtra-firm, drained and cubed
- β2 cups GazpachoHomemade or store-bought
- β1/4 cup Red wineChilled
- β2 tbsp Balsamic vinegar
- β2 tbsp Olive oil
- βto taste Salt
- βto taste Pepper
- βchopped (for garnish) Fresh parsley
- βchopped (for garnish) Fresh basil
- β1 slice (for croutons) Baguette

1. In a blender or food processor, puree the gazpacho until smooth.

2. In a large bowl, whisk together the red wine and balsamic vinegar.

3. Add the cubed tofu to the bowl and toss to coat with the wine and vinegar mixture.

4. Heat the olive oil in a large skillet over medium-high heat.

5. Add the croutons (cubed baguette) to the skillet and cook until golden brown.

6. Add the tofu mixture to the skillet and cook until the tofu is golden brown and crispy.

7. Stir the pureed gazpacho into the skillet and cook for an additional 2-3 minutes.
