Pork Stew with Ukrainian Twist
Hearty pork stew with tender meat and a hint of Ukrainian spices.
Ingredients
- β1.5 pounds Pork shouldercut into 1-inch cubes
- β2 medium Carrotspeeled and chopped
- β3 medium Potatoespeeled and chopped
- β1 large Onionchopped
- β3 cloves Garlicminced
- β1 teaspoon Dried thymeor to taste
- β1 teaspoon Saltor to taste
- β1/2 teaspoon Black pepperor to taste
- β2 Bay leavesor to taste

Heat oil in a large Dutch oven over medium-high heat.

Add the pork cubes and cook until browned, about 5 minutes.

Remove the pork from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and potatoes, dried thyme, salt, and black pepper. Cook for 5 minutes.

Add the browned pork back to the pot, along with the bay leaves.

Pour in enough stock to cover the meat and vegetables, then bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the meat is tender.

Serve hot, garnished with chopped fresh herbs if desired.
