Filipino Chicken Adobo
A classic Filipino dish made with marinated chicken cooked in a savory sauce. This version is gluten-free and perfect for a weeknight dinner.
Ingredients
- ●1 pound chicken breastcut into bite-sized pieces
- ●1/4 cup vinegarapple cider or white vinegar
- ●2 tablespoons soy saucegluten-free
- ●2 tablespoons patis (fish sauce)optional
- ●1 teaspoon black pepperfreshly ground
- ●2 bay leavesfresh or dried
- ●3 cloves garlicminced
- ●1 medium onionchopped
- ●2 tablespoons tomato pasteoptional

Heat oil in a large skillet over medium-high heat.

Add chicken and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, sauté garlic and onion until softened, about 3-4 minutes.

Add bay leaves, vinegar, soy sauce, patis (if using), and black pepper. Stir to combine.

Return chicken to skillet and stir to coat with sauce.

Reduce heat to low and simmer, covered, for 10-15 minutes or until chicken is cooked through.

Stir in tomato paste (if using) and cook for an additional 1-2 minutes.
