Mexican Chicken Adobo Tacos
A fusion of Mexican and Filipino flavors, this dish is a twist on traditional Mexican street food. The tender chicken is marinated in a mixture of soy sauce, vinegar, garlic, and chili peppers, then grilled to perfection and served in a taco shell.
Ingredients

- β2 limesjuiced
- β3 cloves garlicminced
- β1/4 cup chipotle peppers in adobo saucediced
- β1 teaspoon cumin
- β1/2 teaspoon paprika
- β8-10 corn tortillas
- β1 cup shredded cheeseoptional

In a blender or food processor, combine adobo mix, lime juice, garlic, chipotle peppers, cumin, and paprika. Blend until smooth.

Place the chicken breasts in a large zip-top plastic bag or a shallow dish. Pour the marinade over the chicken and massage to coat.

Refrigerate for at least 2 hours or overnight.
