Thai-Style Pork Stew
A hearty and flavorful Thai-inspired stew made with tender pork, rich vegetables, and a blend of spices.
Ingredients
- β1 pound Pork shoulder, cut into 2-inch pieces
- β1/2 pound Polish sausage, sliced
- β1 Onion, chopped
- β3 cloves Garlic, minced
- β2 Carrots, peeled and chopped
- β2 Potatoes, peeled and chopped
- β2 tablespoons Tomato paste
- β2 tablespoons Fish sauce
- β1 tablespoon Brown sugar
- β2 teaspoons Thai red curry paste

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the pork and cook until browned on all sides, about 5 minutes.

Add the Polish sausage and cook until browned, about 3 minutes.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the carrots and potatoes and cook for 5 minutes.

Add the tomato paste, fish sauce, brown sugar, and curry paste. Stir to combine.

Add 2 cups of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the pork is tender.
