Slovakian Casserole
A hearty Slovakian-inspired casserole made with roasted vegetables and tofu.
Ingredients
- β1 block (14 oz) tofu
- β1 cup (any combination of carrots, zucchini, bell peppers) roasted vegetables
- β1 loaf (gluten-free) slovakian bread
- β1 cup (any combination of cheddar, mozzarella, parmesan) tempting cheese
- β2 tbsp olive oilfor greasing the baking dish
- βto taste salt
- βto taste black pepper
- β1/4 cup (chopped) fresh parsleyfor garnish
Instructions

Preheat the oven to 375Β°F (190Β°C).

Cut the tofu into 1-inch cubes and set aside.

Grease a 9x13-inch baking dish with olive oil.

Cut the roasted vegetables into 1-inch pieces and spread them at the bottom of the baking dish.

Place the tofu cubes on top of the vegetables.

Cut the slovakian bread into 1-inch cubes and sprinkle them over the tofu.

Sprinkle the tempting cheese over the bread.

Season with salt and black pepper to taste.

Bake for 25-30 minutes, or until the cheese is melted and bubbly.

Garnish with chopped fresh parsley and serve hot.
