Crisp Korean Hwajeon with Cobnut Garnish

- β2 cups, husked and chopped Cobnuts
- β1 tsp Korean chili flakes (gochugaru)
- β1 cup All-purpose flour
- β1/2 cup Ground rice
- β1/2 cup, thinly sliced Scallions
- β1/4 tsp Korean chili powder (gochugaru)
- β1 package Hwajeon batter mix
- β2 tbsp Vegetable oil

Instructions

Combine chopped cobnuts, chili flakes, flour, ground rice, and scallions in a bowl.

Add the hwajeon batter mix and mix well.

Heat oil in a non-stick pan over medium heat.

Using a ladle, pour the batter mixture into the pan.

Cook for 2-3 minutes on the first side, until the edges start to curl.
