Moroccan Crumble Muffins
Moist and flavorful muffins with a crumbly topping, inspired by Moroccan spices.
Ingredients
- β1 1/2 cups all-purpose flour
- β1 cup tangy citrus sugar
- β2 teaspoons moroccan spice blend
- β1/2 cup cold unsalted buttercut into small pieces
- β2 large eggs
- β1/2 cup plain yogurt
- β1 cup crumble topping (see below)

Preheat oven to 375Β°F (190Β°C). Line a 12-cup muffin tin with paper liners.

In a medium bowl, whisk together flour, citrus sugar, and moroccan spice blend.

Add cold butter to the dry ingredients and use a pastry blender or your fingertips to work it into the mixture until it resembles coarse crumbs.

In a large bowl, whisk together eggs and yogurt until well combined.

Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.

Divide the batter evenly among the muffin cups.

To make the crumble topping, mix together the crumble ingredients in a small bowl until well combined.

Sprinkle the crumble topping evenly over the muffins.

Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean.
