Filipino-Style Sinigang Stew with Couscous
A fusion of Filipino and North African flavors, this hearty stew combines the tanginess of sinigang with the comforting goodness of couscous.
Ingredients

- ●2 cups sinigangstore-bought or homemade
- ●1 large tomato sweetdiced
- ●2 tablespoons vinegar sourapple cider or white vinegar
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●1 large bell peppersliced
- ●1 medium eggplantsliced
- ●1 bunch spinachfresh
- ●to taste salt

Heat a large pot over medium heat.

Add the chopped onion and sauté until translucent.

Add the minced garlic and sauté for 1 minute.

Add the sliced bell pepper and sauté for 2 minutes.
