Sour Sausage and Vegetable Stew
A hearty and flavorful stew inspired by German and Filipino cuisines, featuring sour sausage and a variety of vegetables.
Ingredients
- β1 pound Sweet German sausagesuch as Knockwurst or Bratwurst
- β1 cup Sour tomatoessuch as sinigang mix or fresh tomatoes
- β1 medium Onionchopped
- β2 medium Carrotssliced
- β2 large Potatoesdiced
- β1 cup Couscousuncooked

Heat oil in a large Dutch oven over medium-high heat.

Add sausage and cook until browned, about 5 minutes.

Remove sausage from pot and set aside.

Add onion and cook until softened, about 3 minutes.

Add carrots and potatoes and cook for 5 minutes.
