Kenyan Sweet Yam Stir Fry
A simple and flavorful stir fry dish made with yams and a blend of spices.
Ingredients

- β1/4 cup sweetgrated sweet potato
- β1 tablespoon andgrated ginger
- β2 tablespoons creamycoconut cream
- β1 teaspoon kenyankenyan spice blend
- β2 tablespoons stirvegetable oil
- β1 onion frychopped

Peel and chop the yams into 1-inch pieces.

Heat 1 tablespoon of oil in a large skillet over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the grated ginger and cook for an additional minute.

Add the yams and cook for 5-7 minutes, or until they begin to soften.

In a small bowl, whisk together the coconut cream and kenyan spice blend.
