Mexican Chicken Fritters
Crispy fried fritters filled with spicy chicken, perfect for a Mexican-inspired snack or lunch.
Ingredients
- β1 pound chicken breastboneless and skinless
- β1 cup all-purpose flourfor dredging
- β1 teaspoon spicycayenne pepper or chili powder
- β1 tablespoon zestylime juice
- β2 tablespoons brazilliancoconut oil
- βvegetable oil fryfor frying

1. In a large bowl, combine chicken breast, 1/2 teaspoon of cayenne pepper, and 1/4 cup of coconut oil. Mix well.

2. In a separate bowl, mix together 1 cup of flour and 1/4 teaspoon of salt.

3. Dip each piece of chicken into the flour mixture, coating it evenly.

4. Heat about 2-3 inches of vegetable oil in a large skillet over medium-high heat.

5. Fry the coated chicken pieces for about 5-6 minutes on each side, or until golden brown.

6. Remove the fried chicken from the oil and place it on a paper towel-lined plate to drain excess oil.
