Artichoke and Jerusualem Stew

- β2 medium Jerusalem artichokespeeled and chopped
- β3 cloves Garlicminced
- β1 cup Spicy tomatoesdiced
- β2 tbsp Olive oil

Instructions

Heat the olive oil in a large pot over medium heat.

Add the minced garlic and cook for 1 minute.

Add the chopped Jerusalem artichokes and cook for 5 minutes.
