Sour Cherry Empanadas
Delicious empanadas filled with a sweet and tangy sour cherry filling, perfect for a dessert or snack.
Ingredients
- β2 cups Flaky pastry dough
- β1 cup Sour cherries
- β1/2 cup Granulated sugar
- β1 teaspoon Almond extract
- β1 tablespoon Lemon zest
- β1 Egg
- β1 tablespoon Water

Preheat oven to 375Β°F (190Β°C).

Roll out the flaky pastry dough to a thickness of about 1/8 inch.

Cut out circles of dough using a cookie cutter or the rim of a glass.

In a bowl, mix together the sour cherries, granulated sugar, almond extract, and lemon zest.

Place a tablespoon of the cherry mixture in the center of each dough circle.

Brush the edges of the dough with the beaten egg and fold the dough in half to form a triangle.

Press the edges together to seal the empanada and use a fork to crimp the edges.

Brush the tops of the empanadas with the beaten egg and cut a few slits in the top to allow steam to escape.

Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
