Smoky Mexican Pibil Tacos
A vegan twist on traditional cochinita pibil tacos, using smoky, shredded mexican pibil
Ingredients
- β1 cup Mexican Pibilshredded, vegan version
- β1/4 cup Cilantrochopped
- β2 tablespoons Lime Juice
- β1 tablespoon Olive Oil
- β1 teaspoon Smoked Paprika
- β1/2 teaspoon Cumin
- β1/4 teaspoon Garlic Powder
- β1/4 teaspoon Salt
- β1/8 teaspoon Black Pepper
- β4-6 Tortillascorn tortillas

In a medium bowl, whisk together lime juice, olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper.

Add the shredded mexican pibil to the bowl and toss to coat with the marinade.

Heat a large skillet over medium-high heat.

Add the pibil mixture to the skillet and cook for 5-7 minutes, until lightly browned and crispy.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
