Cochinita Pibil Tacos
A twist on traditional Thai cuisine, Cochinita Pibil Tacos combine the flavors of Mexico with the spices of Thailand.
Ingredients
- ●1 pound Cochinita Pibil Pork
- ●2 tablespoons Smoky Mexican Chili Powder
- ●1/2 cup Shredded Coconut
- ●2 tablespoons Thai Red Curry Paste
- ●2 tablespoons Fish Sauce
- ●1 tablespoon Brown Sugar
- ●2 tablespoons Lime Juice
- ●1/4 cup Cilantro
- ●8-10 Tortillas

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, whisk together chili powder, coconut, curry paste, fish sauce, brown sugar, and lime juice.

3. Add the cochinita pibil pork to the marinade and mix well to coat.

4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

5. Remove the pork from the marinade and place it on a baking sheet lined with parchment paper.

6. Bake the pork for 20-25 minutes or until it reaches an internal temperature of 160°F (71°C).

7. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

8. Assemble the tacos by placing a piece of the cooked pork onto a tortilla and topping with cilantro, if desired.
