Smoky Chicken Satay
Grilled chicken skewers smothered in a sweet and spicy Thai-inspired sauce, served with a side of fresh cucumber and carrot sticks.
Ingredients
- β1 pound chicken breastscut into bite-sized pieces
- β1/2 cup smoky peanut saucestore-bought or homemade
- β2 roasted red bell peppersdiced
- β10-12 veggie skewersfor serving
- β1 cucumbersliced
- β2 carrotssliced
- β2 tablespoons soy sauceor to taste
- β1 tablespoon brown sugaror to taste
- β1 teaspoon fish sauceor to taste
- β1/2 teaspoon garlic powderor to taste

1. Preheat grill to medium-high heat.

2. In a large bowl, whisk together peanut sauce, soy sauce, brown sugar, fish sauce, and garlic powder.

3. Add chicken to the bowl and toss to coat with the sauce.

4. Thread chicken onto skewers, leaving a small space between each piece.

5. Brush grill with oil to prevent sticking.

6. Grill chicken for 8-10 minutes, turning frequently, until cooked through.
