Smoky Lamb Kidney Fry
A flavorful North Indian dish made with smoky lamb kidneys, onions, and a blend of spices.
Ingredients
- β1 pound lamb kidneyscut into bite-sized pieces
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 inch gingergrated
- β2 teaspoons smoky spice blendstore-bought or homemade
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste
- β2 tablespoons ghee or vegetable oilfor frying
Instructions

Heat 1 tablespoon of ghee or oil in a large skillet over medium-high heat.

Add the lamb kidney pieces and cook until browned on all sides, about 5 minutes.

Remove the lamb from the skillet and set aside.

Add the remaining 1 tablespoon of ghee or oil to the skillet.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and grated ginger and cook for 1 minute.

Add the smoky spice blend, salt, and black pepper to the skillet and stir to combine.

Add the browned lamb kidneys back to the skillet and stir to coat with the spice mixture.

Cook for an additional 2-3 minutes, until the lamb is cooked through.

Serve hot garnished with chopped cilantro, if desired.
