Smoky Bean Bowl
A flavorful and nutritious vegan bowl filled with smoky beans and topped with aerated slaw.
Ingredients
- β1 can (15 oz) Canned black beansdrained and rinsed
- β1 tsp Smoked paprika
- β1 cup Aerated slaw mix
- β Bowlfor serving
- β1 cup Kalemassaged and chopped
- β2 tbsp Lime juice
- βto taste Salt
- βto taste Pepper

Preheat oven to 375Β°F (190Β°C).

In a bowl, mix together the black beans, smoked paprika, and a pinch of salt and pepper.

Transfer the bean mixture to a baking dish and roast for 15 minutes.

While the beans are roasting, massage the kale with your hands for 2-3 minutes to tenderize it.

In a separate bowl, mix together the slaw mix, lime juice, and a pinch of salt and pepper.

To assemble the bowls, place a scoop of the roasted beans on the bottom, followed by a spoonful of the slaw.

Top with chopped kale and serve immediately.
