Rogan Josh Recipe
A flavorful Indian lamb curry originating from Kashmir, made with slow-cooked lamb, rogan josh spices, and a blend of aromatic herbs.
Ingredients
- β1 pound lamb shouldercut into 2-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 inches gingergrated
- β2 teaspoons cuminground
- β1 teaspoon corianderground
- β1/2 teaspoon cayenne pepperoptional
- β1 teaspoon garam masalaground
- β1 cup yogurtdiced
- β1 cup tomato pureecanned

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until browned, about 8 minutes.

Add garlic and ginger; cook for 1 minute.

Add lamb and cook until browned on all sides, about 5 minutes.

Add cumin, coriander, cayenne pepper (if using), and garam masala; cook for 1 minute.

Add yogurt and tomato puree; stir to combine.

Bring mixture to a simmer.

Reduce heat to low and cook, covered, until lamb is tender, about 2 1/2 hours.
